About the Recipe

Avocados have a long-standing reputation for being a super-food for your brain, providing the healthy Omega 3 fatty acids and the anitoxidants your brain needs to lower the risk of cognitive decline. But did you know eggs can be part of a brain-healthy diet? However, eggs are high in cholesterol, so be aware that if you already have high cholesterol, moderation is key. According to the Mayo Clinic, most healthy people can eat an egg a day without increasing their risk of heart disease.
In terms of the neurological benefits of eggs, your brain needs chemicals called neurotransmitters for proper signalling and function, and an important one is acetylcholine. Eggs contain choline, which is a precursor to acetylcholine, so it's actually a building block for this neurotransmitter that plays an important role in cognitive function. And that's not all - eggs are an excellent source of protein and recent research suggests that long-term dietary protein intake may help to reduce the risk of cognitive decline.

Ingredients

  • 1 slice of pumpernickel rye bread, toasted

  • 1/2 avocado, sliced or mashed

  • 1 fried egg

  • 2 strips cooked turkey bacon

  • 2 slices pickled red onion

  • 2 slices fresh tomato

  • 1 green onion, chopped

  • balsamic glaze

Preparation

Toast the bread and start layering on the ingredients any way you like!

Drizzle with balsamic glaze, garnish with green onion and enjoy.
